Mom's Sweet Potato Casserole
The Backstory
Mom originally got this recipe from her grandma Doris Maxine (Perry) Gould Kook. She changed a couple things. For example, Mom uses fresh sweet potatoes rather than canned. And at my behest, the top layer became covered in marshmallows rather than just a few sprinkled over it. Mom makes this casserole every year for her Day After Thanksgiving Thanksgiving party.
The Recipe
6 sweet potatoes
1 can of pineapple chunks
3 tablespoons of brown sugar
2 tablespoons of cinnamon
1 teaspoon of nutmeg
2 bags of mini marshmallows
Peel the sweet potatoes and boil until they are soft. Put the sliced, cooked sweet potatoes in a casserole dish. Sprinkle the pineapple chunks, cinnamon, nutmeg, and brown sugar over the sweet potatoes. Cover the casserole with marshmallows, and put in the oven at 375 degrees until the marshmallows are golden.
